When I was in LA a couple weeks ago, for the SCBWI conference, I had a piece of raw, vegan key lime pie at at juice/raw restaurant in the mall around the corner from the hotel (I don’t remember the name of the restaurant, though). I have been craving that pie since I got home and decided to try and make it. So I found this recipe:
and made it. And it was delicious and the texture of the filling was creamy and firm. The only thing I would change if I make it again, is to add more lime juice than the recipe calls for. This pie reminds me of Hail Merry tarts, which I buy sometimes because they taste good and I can eat them. I will probably try making this recipe with some different flavors, too.
I also realized that I don’t know how to take good photos of things that are light colored–like this pie or the corn salad that’s coming next. Well, it’s good to have something to work on.
