What’s for dinner?–millet pasta with tomato-herb-almond pesto

Today I arrived home from a few days in Novi, Michigan with my parents.  My Uncle Phillip died last week and I went for the funeral.  I will write more about that soon, but need a little time to reflect on his sad life.  I spent 4 nights sleeping on the couch.  After that, a funeral (a few days ago) and a five hour drive, I’m tired.  But my beautiful vegetables from Angelic Organics were waiting for me at home, thanks to my lovely new housemate, Patricia.  And they included the first tomatoes of the season, and that means raw tomato sauce for pasta!

Here’s the recipe:

4 small to medium tomatoes

1 large clove garlic

1 stalk basil, leaves removed

1/2 bunch parsley, thick stems removed

(or any fresh herbs you like)

salt to taste

1 good handful, about 1/3 cup, raw almonds

Put everything in a vitamix/foodprocessor/blender, chopping first as needed and blend.  Taste and adjust salt, put on warm pasta and ENJOY.

I made my new favorite pasta to go with it–Bgreen organic millet angel hair pasta.  I buy it at Newleaf Natural grocery–haven’t seen it anywhere else.  They sell it on Amazon, but it’s really expensive there.

I am a writer, handworker, artist and teacher (a WHAT!), and a mom of two beautiful daughters who are amazingly 17 and 21. I am working on getting my first book, a fantasy novel for young people, published and am busy spinning on my new spinning wheel. I have been a Waldorf early childhood teacher for 10 years now, and before that, I was a lawyer. Teaching is much more fun.
