The Spiralizer–my new toy, plus how to spiralize your life plus spiralized nori rolls

OK, I admit it–I have a weakness for kitchen toys.  This is my newest one–

a spiralizer and it is so much fun!  and it is helping me to eat more vegetables, too!

Speaking of healthy new twists–I am now officially on sabbatical!  For the next year, I can keep my own schedule, sleep late (although not if Midnight the cat has anything to say about it).  It’s exciting and scary, too (the sabbatical and sometimes the cat).

I was trying to remember when was the last time I had time like this to follow my own muse.  The answer I came up with–NEVER –except when I was a kid, but that was different.  I am planning to do a lot of writing.  I just finished a major revision of my novel–woo hoo!, get my ETSY shop up and running, do some artistic stuff–drawing and painting–and get healthy.  Living with celiac is hard.  It’s been a long time since I felt really healthy, although I have felt better in the summers when I’m not so busy.  And especially when I’m away from Chicago.  To that end, I’m also planning a couple of trips.  One to Nicaragua and Costa Rica and the other, maybe to Boulder, but at least somewhere besides here for at least part of the winter.

But back to dinner.  I found this great website with spiralizer recipes, Inspiralized.com .  I even bought the cookbook.

and made the nori rolls for dinner.  They were delicious!

I am a writer, handworker, artist and teacher (a WHAT!), and a mom of two beautiful daughters who are amazingly 17 and 21. I am working on getting my first book, a fantasy novel for young people, published and am busy spinning on my new spinning wheel. I have been a Waldorf early childhood teacher for 10 years now, and before that, I was a lawyer. Teaching is much more fun.
