I found this recipe on the Food Network–for Pat’s pulled pork tacos, and modified it slightly. I didn’t make the pulled pork, but we all loved the slaw. Here is my version of Zesty Slaw. It was delicious!
4 tablespoons rice wine vinegar
2 tablespoons fresh lime juice(3 small limes)
2 tablespoons olive oil
1 head napa cabbage, shredded or 1/2 green cabbage shredded
1/2 bunch cilantro leaves, chopped
2 freshly sliced green onions
2 carrots shredded
Salt and freshly ground black pepper
Whisk the rice wine vinegar, lime juice and olive oil together in a small bowl.
Add the cabbage, cilantro, green onions, and carrot to a large serving bowl and combine. Drizzle with the dressing and toss to coat. Season with salt and pepper, to taste, and serve.
